Served at the Summer Open House at the Dennis Center for Active Living on June 25, 2026. (a huge success!)
Ingredients (serves 4 sides)
- 1 medium head of Romaine Lettuce
- 1 cup halved Cherry Tomatoes
- 1 medium bulb Fennel, shaved thin
- 1 medium Pickling Cucumber, ½” chunks
- 2 Mandarin Oranges, separated into segments
- 2 Green Onions, cut
- ½ small Red Cabbage, shaved
- ½ cup Yellow Squash, shaved thin
- ¼ cup dry roasted Edamame or Pumpkin Seeds
Dressing
- ½ cup Extra Virgin Olive Oil
- ¼ cup Rice Vinegar
- ¼ cup fresh squeezed Mandarin juice
- 1 Tbsp Low Sodium Tamari (Soy Sauce)
- 1 tsp fresh grated Ginger
- ½ cup fresh Mint, chopped
- 1 small garlic clove, finely minced
- 1 tsp Maple Syrup
Instructions
- Wash and dry all vegetables thoroughly.
- Place all salad ingredients, except dressing, in a large
salad bowl and gently fold together. - Whisk together all dressing ingredients until well-blended.
- Drizzle dressing over the salad and toss lightly before serving.
