Summer Salad

Served at the Summer Open House at the Dennis Center for Active Living on June 25, 2026. (a huge success!)

Ingredients (serves 4 sides)

  • 1 medium head of Romaine Lettuce
  • 1 cup halved Cherry Tomatoes
  • 1 medium bulb Fennel, shaved thin
  • 1 medium Pickling Cucumber, ½” chunks
  • 2 Mandarin Oranges, separated into segments
  • 2 Green Onions, cut
  • ½ small Red Cabbage, shaved
  • ½ cup Yellow Squash, shaved thin
  • ¼ cup dry roasted Edamame or Pumpkin Seeds

Dressing

  • ½ cup Extra Virgin Olive Oil
  • ¼ cup Rice Vinegar
  • ¼ cup fresh squeezed Mandarin juice
  • 1 Tbsp Low Sodium Tamari (Soy Sauce)
  • 1 tsp fresh grated Ginger
  • ½ cup fresh Mint, chopped
  • 1 small garlic clove, finely minced
  • 1 tsp Maple Syrup

Instructions

  • Wash and dry all vegetables thoroughly.
  • Place all salad ingredients, except dressing, in a large
    salad bowl and gently fold together.
  • Whisk together all dressing ingredients until well-blended.
  • Drizzle dressing over the salad and toss lightly before serving.
