Healthy Turkey Chili

Ingredients
  • 1 lb. ground turkey
  • 1-2 tbsp olive oil
  • 1 large onion, chopped into ½” pieces
  • 2 cups bell pepper, chopped into ½” pieces
  • 4 cloves garlic, minced
  • 1- 15 oz can black beans
  • 1- 15 oz can pinto beans
  • 1- 15 oz can small white or red beans
  • 1 small can whole corn kernels unsweetened
  • 2-3 fresh tomatoes, into ½” pieces
  • 1- 28 oz can crushed tomatoes
  • 1 cup water
  • 1 cup mushrooms, into ½” pieces
  • Optional : 1-2 Hot Jalapeño peppers, green onion, cheese, fresh cilantro, sour cream.

Pre-tenderize meat: Mix ground meat with 1/4 tsp baking soda dissolved in 1 tbsp of water. Allow the mixture to sit for 15–20 minutes before cooking. This method raises the meat’s pH, preventing protein over-tightening and moisture loss. 
Instructions
  1. Prepare & chop all vegetables, open cans.
  2. In a large Dutch oven or soup pot, brown ground turkey meat in oil on medium high heat.
  3. Add peppers, onions, garlic, and spices.
  4. Sautee a few minutes until just tender.
  5. Add water and stir well capturing browned juices from meat and veggies.
  6. Add canned beans, corn, and tomatoes.
  7. Simmer 30-90 minutes. Longer simmer infuses a deeper flavor.
  8. Add chopped mushrooms, simmer another 5-10 minutes.
  9. Garnish with grated cheese, green onions, cilantro, and sour cream. Enjoy!
