
Ingredients
- 1 lb. ground turkey
- 1-2 tbsp olive oil
- 1 large onion, chopped into ½” pieces
- 2 cups bell pepper, chopped into ½” pieces
- 4 cloves garlic, minced
- 1- 15 oz can black beans
- 1- 15 oz can pinto beans
- 1- 15 oz can small white or red beans
- 1 small can whole corn kernels unsweetened
- 2-3 fresh tomatoes, into ½” pieces
- 1- 28 oz can crushed tomatoes
- 1 cup water
- 1 cup mushrooms, into ½” pieces
- Optional : 1-2 Hot Jalapeño peppers, green onion, cheese, fresh cilantro, sour cream.
| Pre-tenderize meat: Mix ground meat with 1/4 tsp baking soda dissolved in 1 tbsp of water. Allow the mixture to sit for 15–20 minutes before cooking. This method raises the meat’s pH, preventing protein over-tightening and moisture loss. |

Instructions
- Prepare & chop all vegetables, open cans.
- In a large Dutch oven or soup pot, brown ground turkey meat in oil on medium high heat.
- Add peppers, onions, garlic, and spices.
- Sautee a few minutes until just tender.
- Add water and stir well capturing browned juices from meat and veggies.
- Add canned beans, corn, and tomatoes.
- Simmer 30-90 minutes. Longer simmer infuses a deeper flavor.
- Add chopped mushrooms, simmer another 5-10 minutes.
- Garnish with grated cheese, green onions, cilantro, and sour cream. Enjoy!
