Sunful Muffins

Kind of like morning glory muffins, but better and they are gluten free.

Ingredients
  • 2 c almond flour
  • 3 t baking powder
  • 2 t baking soda
  • 2 t cinnamon
  • ½ t salt
  • ½ c plain yogurt
  • 6 dates
  • 2 eggs
  • 1/4 c oil
  • 1 t vanilla
  • 1 c grated carrots
  • 1/3 c unsweetened shredded coconut
  • 1/3 c chopped walnuts
  • ½ c raisins
  • 1 grated apple
Instructions
  1. Preheat oven to 375o F.
  2. Mix all dry ingredients together.
  3. Blend dates, eggs, oil, and vanilla well.
  4. Add wet into dry ingredients. Mix in carrots, coconut, nuts, raisins, and apple.
  5. Scoop and drop into muffin or mini-muffin tins, silicon works best.
  6. Bake 20-25 minutes until toothpick comes up clean.
  7. Cool before removing.
