Kind of like morning glory muffins, but better and they are gluten free.
Ingredients

- 2 c almond flour
- 3 t baking powder
- 2 t baking soda
- 2 t cinnamon
- ½ t salt
- ½ c plain yogurt
- 6 dates
- 2 eggs
- 1/4 c oil
- 1 t vanilla
- 1 c grated carrots
- 1/3 c unsweetened shredded coconut
- 1/3 c chopped walnuts
- ½ c raisins
- 1 grated apple
Instructions
- Preheat oven to 375o F.
- Mix all dry ingredients together.
- Blend dates, eggs, oil, and vanilla well.
- Add wet into dry ingredients. Mix in carrots, coconut, nuts, raisins, and apple.
- Scoop and drop into muffin or mini-muffin tins, silicon works best.
- Bake 20-25 minutes until toothpick comes up clean.
- Cool before removing.
