Ingredients
- 4 cups chicken broth
- 1 carrot, sliced in sticks
- ½ cup fresh broccoli
- ½ cup snow peas
- 1 tsp grated ginger
- 2 cloves minced garlic
- 2 fresh scallions
- ¼ cup bean sprouts
- ½ cup sliced bok choy
- 1 cup cut mushrooms of choice
- 1 tsp -splash of tamari/soy sauce
- Ramen Noodles (Brown Rice & Ramen preferred)
Instructions
- Heat broth in a soup pot.
- Sauté broccoli, ginger, garlic, peas, and mushrooms gently in olive oil.
- In a separate pot add noodles to boiling water. Use forks or tongs to help separate noodles while boiling. Cook about 6-8 minutes until noodles don’t stick together as much. Drain.
- Add sautéed veggies and all other ingredients except noodles and scallions.
- Simmer 10 minutes on low.
Add noodles, simmer another 5 minutes on low. Top with scallions right before serving.
